Sunflower and quinoa salad (derived from a recipe on thefeedfeed.com)
This is a really healthy, and bright salad for a sunny spring or fall day. Nutty flavors abound between the quinoa and the sunflower microgreens. The radish adds a nice spicy pop, and the carrot give you a nice crunch. Pair that with the whole mustard dressing and you are in for a great healthy meal!

First off, Cook your quinoa and allow it to cool. While it was cooking I used my mandolin to matchstick the carrots and radish. I then rinsed and dried the sunflower microgreens.
While the quinoa continued to cool, I put together the dressing. I mixed the whole grain mustard, garlic, vinegar, oil, herb de Provence, and pepper. I tasted and felt like the lemon infused olive oil added too much punch. I toned it down a bit with some dry white wine and a touch of agave nectar. Taste and balance to your liking or use non infused olive oil. The dressing can be substituted easily with one of your non creamy favorites.

Then, in a large bowl, mix the quinoa, carrot, and radish. Add the dressing to your liking and mix. In your serving bowl, lay out a nice wide bed of our sunflower microgreens. Then form a nice mound of the quinoa on top. I garnished with a bit of dill, and beet microgreens for gratuitous presentation points.

Recipe as follows
1/2 cup uncooked quinoa
1 cup water
2 medium radishes match sticks
1 medium carrot match sticks
4oz Sunflower microgreens
Dressing (optional...have fun)
4 T white wine vinegar
2 T Lemon infused olive oil (or regular)
1 tea spoon agave nectar (to tone down acidity)
1T Herb De Provence (blend of french herbs see https://www.allrecipes.com/recipe/223272/herbs-de-provence/ )
dash of white wine
2 T whole grain mustard
1 T Garlic
Salt and pepper to taste.
